Whitstable Oyster Festival cocktail by the Pearsons Arms

Will you be raising a glass to the Whitstable Oyster Festival this weekend?
How about a cocktail made specially for the occasion, which can only to be finished off with a real Whitstable Rock Oyster?
With its beachside location, the Pearson’s Arms in the town is always close to the action when it comes to the festival.
In keeping with the crustation celebration, mixologists at the pub and restaurant have whipped up a cocktail that complements and champions the seafood delicacy, using real Whitstable Rock Oyster, which have Protected Geographical Indicator (PGI) status.
Silvery patron tequila is mixed with fresh lime, triple sec and a dash of tabasco. The drink can only be finished with a real PGI Whitstable Rock Oyster to perfectly balance the explosion of citrus flavours.
The cocktail is one of a number launched at the pub for the summer season.
There’s also the Whitstable Sunrise, with orange juice, pineapple juice and grenadine. The fruit infusion has simple ingredients, but promises to be as exciting as its boozy counterpart.
There’s also a frozen lemon margarita which brings a zesty twist to a classic. It combines the traditional Cazabel white tequila and Cointreau then adding limoncello, fresh lemon juice, crushed ice and topping up with lemonade.
Watch the sunset go down as you sip the pineapple and blood orange gin Martini, using Cointreau, fresh lime juice, Malfy blood orange gin, ginger liquor and shaken with pineapple juice.
