Sissinghurst: Head chef joins The Milk House from the Swan and Dog in Great Chart

He may be under 30, but Joshua Price still brings a decade of experience with him to his new pub as head chef.
Twenty-nine-year-old Joshua, who joins the Milk House in Sissinghurst, from the Swan and Dog in Great Chart, started out in the Brecon Beacons in his native Wales.
Since then he his achievements include supporting the launch of British food champion Mark Hix’s restaurant at the Belgrave Hotel in Knightsbridge.
He will be responsible for leading and inspiring the kitchen team in creating a range of seasonal menus, and is relishing the chance to developing the village pub’s Sunday roast offering.
“I’m excited to have found a role that will give me the freedom to express myself,” he said.
“I’m confident that the owners and I share the same appreciation of good local ingredients, prepared to a high standard and without too much complication in the process.
“I’m glad to be joining a team with such a strong reputation for good food, but there are always opportunities for improvement.
“First on the cards, I’ve always believed that the mark of a good pub is its roast.
“The Milk House is a great pub, so I’m looking forward to developing something special with a bit of a twist.”

Dishes he will be bringing to the summer menu, which launches this month, include grilled langoustines with fennel, smoked lemon and garlic butter, and pomegranate poussin with potato waffle and a red cabbage, spinach and blackberry slaw.
Other seasonal local ingredients include cherry blossom, heirloom tomatoes and mini chorizo.
Executive head chef and owner, Dane Allchorne, said: “Joshua is exactly the kind of person we need to deliver our vision and is an asset to our team.
“He has already demonstrated both technical skill and a passion for food, as well as a sense of humour and the ability to cope under pressure.”
Dane and wife Sarah also run a second pub, the Barrow House in Egerton.
